Transfer to the bowl with the chopped onion. Stir in butternut squash, thyme, chicken broth, salt and pepper. Use an immersion blender to puree soup. Alternatively, let the soup cool slightly and carefully puree in batches in an upright blender.

- Peel and chop butternut squash and potatoes to small cubes. Add olive oil, salt, pepper and dried thyme and bake it at 200 degrees of celsius for 25 minutes. (Ošúpeme a nakrájame tekvicu a zemiaky na malé kocky. Pridáme olivový olej, soľ, korenie, sušený tymián a pečieme 25 minút pri 200 stupňoch.)
- Meanwhile prepare chicken or vegetable broth and chop vegetables. (Medzitým si nachystáme kurací alebo zeleninový vývar a nakrájame si zeleninu.)
- In a bigger pot, melt butter with olive oil and cook chopped onion until golden brown. Add other vegetables and cook them until soft. Season with salt and pepper. (Vo väčšom hrnci si roztopíme maslo s olivovým olejom a osmažíme nakrájanú cibuľu dozlatista. Pridáme zvyšnú zeleninu a varíme do zmäknutia. Osolíme a okoreníme.)
- Add roasted squash and potatoes and pour over broth. Simmer 10 minutes. (Pridáme opečenú tekvicu a zemiaky a zalejeme vývarom. Varíme ešte 10 minút.)
