Instructions to make Veg Fried Rice:
  1. Wash and soak rice for 10 minutes.Boil rice with little salt,1 to oil and cook till nearly done but not soft.Drain it in a strainer,spread and set aside.Heat 2 tbsp oil in a skillet and fry cashewnuts. Sprinkle half crushed whole garam masala and cumin seeds.Add chopped onion and lightly fry.Add bay leaves and rest of chopped vegetables except capsicum.When they are cooked halfway,add capsicum and fry.Add ginger paste.

Fry all and add salt a sugar to taste.Add cashewnuts and raisins and toss all.Heat ghee in a wok and spread the fried vegetables and cooked rice in layers.Sprinkle garam masala powder and little ghee on top.Cook covered in low flame till done.Lightly toss to mix well.Serve mixed veg fried rice with paneer,kabab or chicken or mutton preparations.
