In China, supermarkets sell century eggs still in their furry rice chaff jackets, looking like mini hay bales or dug-up dino eggs. This was the lovely tofu dish I made for our Chinese lunch party.   1. Open the soft tofu and quickly rinse in water, then gently place in a plate
  2. Slice century eggs and put in the top of tofu.
  3. In a small bowl, mix together soy sauce, oyster sauce and sugar.. Then pour onto the tofu.
  4. Put pork floss (as many as desired)
  5. Garnish with chopped spring onions. Enjoy!

As I previously mentioned, it is literally just a block of cold silken tofu, topped with shallots, some different seasonings (soy sauce, sugar, sesame oil, black vinegar), a chopped up century egg and some coriander. To serve, again drain off any water exuded from tofu and top it with a layer of century egg mixture followed by a handful of green onions.
