- Take Basmati rice or rice used for idli batter(sometimes i use the special rice for rissoto)
- Get medium sized mushrooms
- Take diced red capsicum
- Get diced green capsicum
- Get chopped carrot
- Get Salt
- Prepare cheese cube(you can take 2 cubes also)
- Prepare cream(optional)
- Make ready black pepper powder
- Prepare olive oil
- Prepare Vegetable stock or hot water for cooking rice
Steps to make Mushroom Risotto:
- Take olive oil in pan and put all veggies and saute for 2 minutes. Now add mushrooms and saute for a min.
- Now add rice and saute on medium flame. When a crackling sound comes out of pan add vegetable stock or simply heated water in it. Cook on medium flame. Don't add water at one time, gradually add water and continue cooking.
- When rice starts looking cooked add salt, pepper and finally cheese and cream in it and keep on flame for a minute or two. Your healthy, yummy rissoto is ready to serve.
