- Cut the butternut squash into strips (0.5-0.75 inches thick). Start by cutting off the two hard ends. Then cut the pumpkin in half lengthwise and peel each half. Remove the seeds with a big spoon, then cut into strips lengthwise. Line the pumpkin strips on the baking sheet.
- Prepare the coating by mixing olive oil with garlic, thyme and a pinch of salt and pepper. Brush it on the pumpkin strips.
- Bake until tender. It will take about 20 minutes (but start checking the pumpkin with a fork after 15 minutes). Serve directly.
Throw away the leftover skins, or compost them, or whatever. Prepping a pumpkin is a lot easier than you might think. Once roasted, toss cubes into a salad, or use them in a curry, soup, or stir-fry. And of course, you can also purée roasted pumpkin in a food processor or blender. Pumpkins are a popular squash—for good reason!
