- Place butternut squash, red pepper and red onion on roasting tray. Toss it with olive oil. Stick it to the oven preheated to 180 °C. Roast for 15 min.

- Add roasted veg. And cook it for another few min. Adjust seasoning and finish with flat leaf parsely.
- Serve. There is a good ratio veg/meat so no need for side veg. I had mine with sweet potato mash but can be served with crusty bread, mash or rice.
