In a large bowl, add butter and sugar. Add vinegar and vanilla, beat until incorporated. In another bowl, combine flour and baking soda. Add the flour gradually in chunks into the butter mixture.

  1. In a bowl cream together the butter and sugar. After a couple of mins, add the eggs

  3. In a seperate bowl, combine the flour, salt and baking powder. Mix it well and slowly

  5. And all the flour is fully incorporated
  6. I then wrapped the dough ball in some cling wrap and placed it in the fridge for an hour
  7. Once out of the fridge, divide it into two dough balls and place in two seperate bowls
  8. In one add red and the other green. You can go dark or light as you want, as you can see I went
  9. For the darker shade :)
  10. On a lightly floured (and clean haha) surface, roll out each dough ball seperately to a 1/4inch thickness
  11. With a pastry brush I applied some water on one layer (doesn't matter which really). To easily transfer the other layer onto this one, roll it around the rolling pin and then transfer so you don't rip the dough. I applied the water to help it stick together
  12. Trim the edges so it looks nice and clean and then its time to bring out the sprinkles! YAY
  13. I brushed the dough log with the water and then rolled them in sprinkles, if you want to stick to the christmas theme go with red, green and white, I couldn't find them on the day I was baking these!
  14. Wrap the dough again in plastic wrap and refrigerate for 30mins
  15. Preheat the oven to 180C
  16. Once chilled, slice the dough into your desired thickness and place them on a baking sheet covered
  17. With baking paper
  18. Bake for 8-10mins… When the cookies no longer look 'wet' they are ready to be pulled out!
