Great recipe for Butajiru / Tonjiru. 'Butajiru' is a type of Miso Soup with pork in it. It is a very popular dish. 'Butajiru' usually contains Satoimo (Taro) and Konnyaku and Gobo (Burdock Root). Many Asian Grocery stores sell them but it might be difficult for you to find them. Tonjiru (or Butajiru) is a kind of Miso Soup with pork and a lot of root vegetables such as Gobo (burdock root) and carrot.
Steps to make Butajiru / Tonjiru:
- Prepare the Vegetables and Pork. Slice Pork thinly, and cut Vegetables and Tofu into small bite-size pieces.
- Heat Dashi Stock (OR Water) and Vegetables in a pot, and cook on a medium heat until vegetables are soft. Then add thinly sliced Pork.
- When Pork is cooked, add Miso and Tofu. Remove the soup from the heat just before it starts to boil.
- Sprinkle finely chopped spring onions, and serve. *Shichimi (Japanese Chilli Powder) is also recommended to add extra flavour.
Even though it is a Miso soup, Tonjiru tastes very different from ordinary Miso Soup. Tonjiru has a distinct pork flavor and strong taste from Gobo.
