  2. Get a tortilla and spread the avacado mix onto it evenly. Try not to spread it all the way to the edge as you want some room for over spill.
  3. Sprinkle the grated cheese over the avacado and top with the second tortilla. I didn't really measure the cheese I just added a good handful.
  4. Over medium heat, heat up a frying pan and rub with butter.
  5. Carefully add the quesadilla for 2-3 minutes then gently flip over.
  6. Cut into 6 triangles and serve immediately.
