In a medium-size bowl, combine eggs, milk, cheese, salt, and pepper. Stir in the bell pepper and onions. Using a knife, loosen the quiches around the edges and remove from the cups.

To begin with this particular recipe, we must prepare a few components. You can have bite sized cornbread quiches using 4 ingredients and 8 steps. Here is how you cook it.

The ingredients needed to make Bite sized cornbread quiches:
  1. Prepare 1 box of cornbread mix. (or your favorite cornbread recipe )
  2. Make ready 3 eggs
  3. Make ready 1/2 cup cheese
  4. Get 1 cup heavy cream

The beauty of this quiche is, it can be served for breakfast or brunch of course but, it's also fitting to be paired with a salad for lunch. These mini quiches are filled with roasted golden beets, fresh thyme and rosemary, and topped with creamy goat cheese and crunchy pine nuts. Bite sized and easily made ahead of time, these mini quiches would be a perfect appetizer for Easter brunch. I attempted bite-sized quiche in both a muffin tin and a mini muffin tin, and had far more success with a mini muffin tin.

Instructions to make Bite sized cornbread quiches:
  1. Mix the cornbread to the directions on the box. We are making a dough here not a batter so start with dry ingredients and slowly add the wet untill you get a dough.
  2. Preheat oven to 400
  3. Roll out cornbred and cut pices big enough to make a cup the size of your muffin tin. Mine was for mini muffins so i cut the size accordingly. Put it in the muffin tins.
  4. Mix your quiche, i used 3 eggs the cream and the cheese. Add anything else you want at this time.
  5. Pour your mixture into the cornbread cups.
  6. Top with a little extra cheese.
  7. Bake 15 min or until golden brown.

Because the rounds of dough need to be pressed firmly into the bottom and all the way up the sides of each well of the muffin tin, you'll need a surprising amount of dough, so it's better to start with smaller wells. Instead of one large quiche, I pour the mixture into the bottoms of a greased muffin pan, a little less than half full. It makes bite sized portions that are perfect for a party. My friends always ask me for "my recipe"! Oh, I use whatever shredded cheese is on sale at the store.
