This traditional Goan pork dish flavored with chilies, garlic and vinegar is spicy and tangy all at the same time. This dish will leave your tastebuds tingling for more. Never seen before on You Tube, this is an Original Goan Pork Vindaloo from my Mother cooking recipe.

The ingredients needed to make Goan pork:
  1. Prepare 800 g pork loin
  2. Prepare 4 garlic cloves, crushed or finely diced
  3. Take 2 tbsp ground ginger or 3 cm grated fresh ginger
  4. Take 1 tbsp salt
  5. Take 1 large onion finely diced
  6. Take 1 green chilli, deseeded and finely chopped
  7. Get 1 tbsp turmeric
  8. Prepare 1 tbsp ground cumin
  9. Prepare 1 tbsp black pepper
  10. Take 500 ml chicken/ pork/ vegetable stock

The Goan Pork Sorpotel has it's origins in Sarapatel, a dish from Alentejo, Portugal. The word 'sarapatel' literally means confusion, probably referring to the mish-mash of ingredients of pork heart. Goan Pork Vindaloo cooked with garlic, vinegar and chilli. This delicious dish comes from the city of Goa and is popular Spicy pork cooked with dried chillies, garlic and vinegar.

Steps to make Goan pork:
  1. Slice the pork loin into 1-2 cm chunks. Place the pork into a bowl, add the garlic, ginger and salt. Then cover with cling film and place in the fridge to marinade for a minimum of 1 hour.
  2. Fry the onion and chilli until soft. Add the pork, marinade, turmeric, cumin and pepper. Sear the pork but do not cook through.
  3. Add the stock until the pork is covered. Top up with water if necessary. Bring the pork to the boil and then reduce the heat until gently simmering.
  4. Cook slowly, stirring occasionally until the mixture has reduced to a rich and thick sauce. Probably 1-2 hours if cooking in the hob without a lid. OR after step 3 transfer to a casserole dish, cover with the lid and place in a pre heated oven at 160C for 3-4 hours. Until a rich and thick sauce has formed.
  5. Serve with rice or warm bread and enjoy.

Sorpotel, that quintessential Pork dish that is part of almost every single Goan gathering, be it a Birthday, Wedding, Christmas or even just a Sunday family gathering. Add pork and cook until brown all over. Linguiça or Chorizo commonly called as Goan Pork Sausages by tourists are typically sausages strung together with a thick thread and are usually sold by the kilo if you purchase them fresh off a butcher. The Goan version of pulled pork is a meal for times of celebration. Serve it in lettuce cups with spicy coleslaw.
