How to make pork katsu curry. Start by preparing your pork katsu. You want to trim your chops of any fat then season them really well with sea salt and pepper. Next, we are going to bread them by first coating them in flour, then with egg, and then lastly with the panko breadcrumbs.

  9. Add prepared curry roux. I use the whole thing but you can start with 3-4 Tbsp of curry roux. Add salt & pepper again. Taste it up to your taste. Now you can add butter. Let it melt then take the curry of the heat. Close the lid.
  10. To make pork katsu, flatten the pork by bashing them with roller pin. Add salt and pepper two sides. Coat the pork with flour, dip in eggs, then cover with bread crumbs.
  11. Deep fry in hot oil.
