Nikujaga quite literally translates to "meat and potatoes" - niku means "meat" and jaga means Dashi is an incredibly simple broth, and it forms one of the culinary cornerstones of Japanese cooking. Nikujaga (肉じゃが, meaning meat-potato) is a Japanese dish of meat, potatoes and onion stewed in sweetened soy sauce and mirin, sometimes with ito konnyaku and vegetables.

Rather the bulk of the dish is supposed to be the potatoes while the beef is there merely to flavor the broth. Nikujaga is literally meat (niku) and potatoes (jagaimo) in Japanese.

Instructions to make Simple Nikujaga:
  1. Peal potatoes, cut into bite-size and put them in water for 5 min to remove starch.
  2. Peal and slice carrots, roughly 5mm.
  3. Slice onion.
  4. In a pot, stack potatoes, carrots, onions and then beef. Mix the soup and pour in. Recommend to use cast iron pot such as Le Creuset.
  5. Put a lid, put the pot on a small fire and wait for about 15min. Water coming out from vegetables, this makes the taste richer.
  6. Prepare the beans aside. Put them in boiled water till they become soft enough.
  7. Let’s return to the pot. Check the hardiness of potatoes. Just stick chopsticks or any, if it easily go through, remove the lid and keep heating until the soup become less.
  8. Let’s eat!

It is a stewed dish seasoned with Potatoes used in Nikujaga are anything you like. If you like soft and fluffy, use Russet potatoes. Nikujaga is one of those dishes that anyone could wing without a recipe once you know the gist of what it's supposed to taste like. The beef can be anything from ground chuck to short ribs. Nikujaga is very simple to make once you have what you need, so its a great place to start branching out and learning how Nikujaga has a lot of steps and a lot of waiting time, but it's not that hard to do!
