- Cut the plantain round shape and fry in deep hot oil until brown
- Dice all the vegetables and and stir fry some in a pan with a little oil
- Then set aside
- Add the stir fry veggies inside the whisked eggs and stir all together add the curry and salt for taste
- Bring a baking pan add a little oil to grease it
- Pour the whisked eggs to the pan add the fried plantain one by one until the its all covered add the other vegetables that was not fried on top to garnish
- Put in the oven and bake for 5 minuets
- Cut as a pizza shape and serve with tea or juice
