- Make ready 2 tsp Oil (to saute the veggies)

- Then break one egg in a bowl. In the veggies mixture make a space for the egg with a spoon and pour the egg on the same space. Likewise pour all the other eggs on the mixture. At this stage cover the lid and cook on a low flame for 5 mins or until the eggs are cooked to your liking. Here i have cooked it little more as my daughter do not love the poached eggs. You can do it as per your choice.
- Once done garnish with the spring onion and the coriander leaves. - Serve hot with the bread toast or anything of your choice. You can also add the spices like cumin powder to the veggie mixture.
- But i preferred to keep it simple. It is a healthy dish which you can enjoy in your snacks. Here my family enjoyed this as the wholesome breakfast with some fruits and coffee of individual choice. You can experiment this with difference veggies of your choice to make it more healthy and tasty.
