- Cut and squeeze the juice from 3 limes. Or pour enough lime juice in the flat container to cover shrimps. Let stand until shrimps turn pink (about 30 minutes). Cover and place in the refrigerator. (The lemon juice cooks the shrimp)
- While shrimp is being cooked in the lemon juice dice onion, jalapeno, cucumbers, and tomato (remove seeds from tomatoes and cucumbers so they wont turn soggy later on)
- Remove cilantro leaves from stem.
- When shrimp are ready, mix all ingredients together. Add remaining lime juice or to taste. Add salt and pepper.
- Top with avocado (optional). Serve with crunchy tostadas, tortilla chips or crackers.
