  3. Let the veges almost cook then pour the egg's mixture on top, make sure evenly spread then sprinkle the grated cheese on top and put the lid on. After 3 minutes lower down the stove temp. Though on top the mixture is liquify with cheese but underneath the omelette starting to be burnt. So with the flat spatula, cut on top of the omelette in four then quickly turn over all four portion of the segment, then put the lid on and let it cook for 2 '. Cook, remove and transfer to a serving dish.
  4. To be serve with steamed Jasmine rice.😙

The second time I made it I used a little less cheese and it was still crispy and perfect. Was going to make this exactly as written but I got greedy during the cooking process and added my usual omelette fillers; feta onion and spinach.
