This is one of my favorite dish. Spicy Dosa - Dosa on the wheels. You get Masala Dosa, Loni Dosa, Sponge Dosa, Cheese Dosa, Paneer Dosa. Traditional south indian cuisine dosas,but with little variation, yes spicy dosa.
Instructions to make Spicy dosa:
- Raw rice 1 1/2 cup toor dal 1/2 cup, wash two times and soak it for 2 to 4hrs.
- Add 25 shallots, 7 garlic, 1tsp cumin seeds, 1tsp fennel seeds, 7 to 10 red chillies, cinnamon cloves 4, 2tsp coriander seeds and grind coarsely.
- Then add soaked rice, dal, salt, hing and add water and grind it to dosa batter.
- Add chopped coriander curry leaves mix well. Heat pan brush some oil and pour dosa batter make thick or thin dosa, add oil cook for a mint. Flip then add little oil and cook for another mintues.
Relish the Dosas as breakfast or meal with sambhar and coconut chutney. Dosa and idlis are a staple of southindian meal. They are a lifesaver when you have no time to make anything. They are served with chutney or sambar. Uppu huli dosa- this genuinely colorful breakfast is so close to my soul that I love eating it straight I make this dosa batter in huge quantity and in a portion I throw in healthy greens like fenugreek leaves.
