  3. Sindhi_Chana_Masala. 1. Soak the chana in 4-5 cups of water the previous night. Next morning cook as follows - 🌱2. Boil chana in a pressure cooker with 3 -4 cups of water for 10 minutes after the first whistle. While chana is being boiled get the masala ready. - 🌱3. Heat oil in a thick bottomed pan or kadhai. - 🌱4. Now add cumin seed, let them splutter. - 🌱5. Next add green chillies and ginger garlic paste, mix well and add onions. On low flame brown onions till they are light brown
  4. Sindhi_koki - (#piyaz_ki_roti. Take a mixing bowl or dough kneading plate, mix all the ingredients mentioned above. Add water as needed, knead the stiff and thick dough. Hold on the dough for resting for 2-3 minutes.
  5. Divide the dough into four equal proportions. Take rolling pin, roll out to a circle of about 2.5" diameter.
  6. Heat a flat tawa (griddle pan) on a medium heat, place the rolled out circle (Koki) on it, roast Koki till both the sides are well cooked and slightly brown. Apply ghee and roast again. Cook till very small brownish spots appear on both sides. Follow the same process with remaining koki dough..
