  2. Prepare 250 gms cauliflower small florets
  3. Take 1 big carrot, chopped
  4. Get 100 gms french beans chopped
  5. Get 1 cup green peas(I used frozen)
  6. Make ready 3 onions chopped
  7. Get 3 potatoes chopped
  8. Prepare 4 tbsp ghee
  9. Make ready to taste Salt
  10. Take 1 pinch soda bi carb
  11. Prepare 1 tbsp green chillies ginger paste
  12. Get 1 tbsp garlic coarse paste
  13. Make ready 3 tomatoes chopped
  14. Prepare For coconut milk(11/2 cup)
  15. Get 1/2 coconut. chopped into small pieces
  16. Prepare 1 glass water
  17. Take 1 tbsp corn flour dissolved in 1/4 cup cold water
  18. Prepare For spaghetti
  19. Make ready 200 gms spaghetti
  20. Get For mint concoction water
  21. Take 1/4 cup mint leaves (phudina)
  22. Get 2 green chillies
  23. Take to taste Salt
  24. Take 2 tbsp water
  25. Make ready Other ingredients
  26. Get 2 small potato thin crisp fries
  27. Prepare 1 cup spicy banana chips
  28. Prepare 1/4 cup roasted peanuts(de skin)
  29. Prepare to taste Chilli sauce
  30. Make ready to taste Soy sauce
Instructions to make Spaghetti Khowsuey:
  1. For curry. Heat ghee in big vessel. Add chopped cauliflower, carrot,french beans, green peas,onion and potato pieces.
  2. Add soda bi carb and salt. Saute for few minutes till soft. Add little water and cook for 5 mins,in between stirring constantly.
  3. After 5 mins add chopped tomatoes, green chillies ginger paste and garlic coarse paste. Mix and cook till done.
  4. As veggies being cook, prepare coconut milk…add coconut pieces in mixer jar,grind it. Add water and grind again to smooth paste. Strain this coconut mixture through muslin cloth..to get coconut milk. Keep aside.
  5. On other gas, keep water filled vessel for boiling. Chopped spaghetti into small pieces. Put in boiling water,add salt and 1 tbsp oil. Boil for 10-12 minutes (till cooked). Strain and keep aside.
  6. As veggies being cook add coconut milk,boil and add corn flour water. Stir till curry turns thick. Remove from flame.
  7. For mint concoction…grind mint leaves, chopped green chillies,salt in blender to smooth paste. Add water to make liquid consistency.
  8. To assemble/ serve..in a plate place boiled little hot spaghetti.
  9. On it pour curry.
  10. Sprinkle potato fries,banana chips (crushed),and roasted peanuts.
  11. On it sprinkle chilli sauce,soya sauce and mint concoction.
  12. Serve/ Relish Delicious Spaghetti Khowsuey.
