  1. Preparing Stuffing : - - Take a wok. Add oil. Heat. Add cumin and coriander seeds. Add cashew nuts. Roast. Add green chillies. Roast. Add onions. Saute. Now add boiled and mashed potatoes. Salt, black pepper and amchoor. - - Cook. Mix properly. Switch off flame. Let it cool.
  2. Now for outer layer. - - Bind a tight dough with the above mentioned ingredients. Keep aside for 10 min. - - Now take some quantity of dough. Roll it with a rolling pin. Cut sides and make a square sheet. Apply water on all four sides. Keep stuffing and fold the sheet in half. Press from all sides. - - You can use fork also to press three sides. - Make all pockets.
  3. Now preheat oven at 180•c for 10 min. - - Bake potato pockets at 180• c for 25 min or till outer layer is crisp. - - While baking brush pockets with oil. - Keep flipping in between to ensure they are baked from all sides equally. - - Enjoy😊
